CINNAMON BAKED SWEET POTATO FRIES RECIPE

These yummy, crispy baked sweet potato fries are a delicious family favorite snack, meal or side. Sweet potatoes get a gold star for their high anti-inflammatory benefits, plus just one sweet potato contains almost half of your daily recommended intake of vitamin C. Now add on cinnamon’s health promoting wowness - full of healthy immune system and disease-fighting antioxidants - to make this dish an all around awesome meal. Plus, who doesn’t like fries!?

INGREDIENTS: Serves 4-6

  • 4 medium sized sweet potatoes (organic if possible - washed well)

  • 4 teaspoons organic extra virgin olive oil

  • ¼ teaspoon organic ground black pepper

  • Sprinkle evenly organic ground cinnamon

PREP:

  1. Preheat the oven to 450°F.

  2. Wash potatoes with a vegetable brush. Keep skin on if possible for added fiber. Can peel potatoes if you don’t like skin.

  3. Cut into matchsticks (around ¼-inch each).

  4. Place cut potatoes in a large bowl. Add oil, pepper and cinnamon. Toss evenly until coated.

  5. Spread your coated potatoes on 2 large baking sheets in a single layer.

  6. Bake for 15 minutes. Then rotate baking sheets and gently turn over potatoes using a spatula.

  7. Continue baking for around 20 additional minutes or until just crisp. You’ll need to keep careful watch of the potatoes and turn frequently to prevent burning or sticking to the pan.

  8. Ready to enjoy!
