Eggs are such an easy and incredibly delicious meal. Eggs are filled with 6 grams of good-for-you protein, contain just 72 calories, many vitamins and nutrients and tons of tryptophan. This omelette is filled with so many great veggies. You can easily swap out whatever veggies you have at home or prefer to eat - just make sure you get plenty of greens. Whip up this filling meal that will give you energy, keep you satisfied and can be eaten for any meal of the day. We love this dairy-free version for easy digestion. This recipe is TKM APPROVED!

INGREDIENTS: Serves 3

  • 3 organic eggs

  • 2 organic egg whites

  • 1 spoonful coconut milk

  • ground black pepper, to taste

  • dash turmeric

  • ½ tablespoon extra-virgin olive oil

  • ½ ripe avocado, diced

  • 1 cup organic baby spinach (torn up into small pieces)

  • 1 cup organic watercress

  • 4 cremini or white button mushrooms finely chopped

PREP:

  1. Crack the whole eggs and egg whites into a mixing bowl.

  2. Add the coconut milk, a pinch of pepper and turmeric and use a fork to gentle whisk, but don't over do it.

  3. Heat a 10–inch skillet over medium-high heat. Add ¼ tablespoon of olive oil and heat until just hot. Add the mushrooms and cook until lightly browned – stirring occasionally (around 3-5 minutes).

  4. Lower the heat to medium, then add the spinach and watercress and stir well so that they are glistening with the olive oil. Cook until it’s wilted, about two minutes.

  5. In a separate 8 or 10-inch skillet, add the remaining ¼ tablespoon of olive oil and heat until just hot. Add the eggs to the pan, spreading them out evenly so they cover the whole base of the skillet. Cook for about 1–2 minutes. You'll see some bubbling and the bottom layer of the eggs will start to harden and set.

  6. When you see that, add the mushrooms and greens from your other pan to mainly half of the egg circle. You can also add in the diced avocado on the same half of the circle.

  7. When the eggs are almost cooked all the way, loosen the half of the circle that is empty, and carefully flip it to cover the egg, mushrooms, greens and avocado and as best you can. Gently press down on the omelette with a spatula.

  8. Cook for about 30 seconds more. Carefully transfer your omelette to a place. You can cut in to share this delicious meal!
