SKINNY SPINACH & STRAWBERRY SALAD RECIPE

This special Skinny Spinach & Strawberry Salad makes for the most delicious and beautiful summer salad. This salad is filled with so many high nutrient but low calorie ingredients that it will leave you feeling perfectly satisfied. Featuring fresh spinach, high-antioxidant strawberries, inflammation reducing pumpkin seeds, the healthy fat of avocados and topped off with the most delicious TKM Ultimate Organic Dressing, making this salad your hands down new summer favorite. 

INGREDIENTS: Serves 4. Use organic when possible.

SALAD:

  • 1 package organic spinach

  • 2 cups organic strawberries (halved) (Note: You can replace with any berries, pears, peaches, nectarines, pomegranate)

  • 1 large avocado, cubed

  • ⅓ cup unsalted pumpkin seeds 

Optional Ingredients based off your likes: 

  • Can add in quinoa

  • Pick other unsalted nuts: chopped almonds, pistachios, walnuts 

  • Top with grilled salmon

  • Top with grilled prawns

  • Serve beside TKM Salmon Beauty Burger (or black bean burgers)

  • Serve beside TKM Cauliflower Pizza 

DRESSING:

  • Splash of filtered water

  • Organic apple cider vinegar

  • ½ lemon squeezed

  • 1 teaspoon of organic honey

  • ¼ teaspoon cinnamon

  • ¼ cup extra virgin olive oil

PREP:

DRESSING: 

  1. Whisk the splash of water, vinegar, lemon, cinnamon and honey in a large bowl or use a salad dressing shaker.

  2. Slowly pour in the olive oil while whisking until the dressing comes together.

  3. Refrigerate and chill in the fridge until your salad is ready to be served. You can store in the fridge for up to one week.

SALAD: 

  1. Add spinach to a large salad bowl. Layer on the sliced strawberries, avocado cubes and pumpkin seeds. This is when you would also add any additional add-ins.

  2. Serve dressing on the side or drizzle on the salad.
