SUPER MOIST & HEALTHY BANANA-ZUCCHINI BREAD RECIPE
This easy to make bread is filled with good-for-you zucchini that’s undetectable. It’s an awesome way to get more nutrients into your family’s diet in a tasty way. Fiber, potassium, whole grains and greens makes this a powerhouse snack. It’s a delicious pick-me-up!

INGREDIENTS: Makes 2 round breads
4 eggs
1 cup sugar (or replace with 1 cup applesauce)
1 cup vegetable or canola oil
2 medium ripe bananas, mashed (~ 1 cup)
3 cups whole wheat flour
1½ teaspoons baking powder
1½ teaspoons baking soda
1½ teaspoons ground cinnamon
1 cup shredded unpeeled zucchini
1 cup mini-carobs or mini-chocolate chips
PREP:
In a bowl, beat eggs with a fork. In a mixer, blend in sugar and oil. Add bananas and mix well. Combine the flour, baking powder, baking soda and cinnamon - stir into egg mixture. Stir in zucchini just until combined.
Pour into two greased round pans. Bake at 350°F for 50 minutes. Check with a toothpick to make sure it comes out clean. Cool for 10 minutes and the remove from pans to wire racks to cool completely.
We slice ours like a pizza pie. Freeze one bread and serve the other one. Freezes very well!
