AVOCADO MULTI-SEED TOAST RECIPE
This multi-seed cracker aka “toast” is vegan, gluten-free, grain-free and absolutely delicious! It’s easy to make and loaded with good for you seeds that are incredible sources of healthy fats, vegetarian protein, fiber and antioxidants. Plus seeds can help reduce the risk for many diseases and illnesses. Avocados are not only delicious, but they are a powerhouse food. Avocados are high in healthy fats that benefit both your body and the health of your skin. Seeds + Avocados = Yum! This recipe is TKM APPROVED!
INGREDIENTS FOR SEED CRACKER: Makes ~ 1 cookie sheet cracker
½ cup raw organic pumpkin seeds
½ cup raw organic sunflower seeds
½ cup raw organic sesame seeds
¼ cup organic flaxseeds
1 tablespoon arrowroot powder
1 cup boiling water
INGREDIENTS FOR AVOCADO TOPPING: Serves 2
1 avocado
1 large organic cucumber
½ teaspoon finely grated organic lemon
10 fresh mint leaves, torn up small pieces
turmeric and pepper to taste
extra-virgin olive oil and lemon juice to taste
PREP FOR SEED CRACKER:
Preheat the oven to 320°F.
In a large bowl, mix all the cracker ingredients together. Allow this mixture to sit for 20 minutes to firm up.
Line a large piece of parchment paper on a baking sheet. Spread out your mixture evenly over the parchment paper.
Cover the mixture with another piece of parchment paper and use a rolling pin to flatten out evenly. Make sure the sheet is less than ¼ inches think. Carefully remove the top parchment paper.
Bake for 45 minutes. Let cool and then break the cracker into large pieces. Or you can use a pizza cutter to cut into large squares. These crackers will last up to a week in an airtight container.
PREP FOR AVOCADO TOPPING:
While the crackers are baking, use a peeler to shave the large cucumber into thin strips.
In a medium bowl, place the shaved cucumber and toss with the lemon zest, torn mint leaves, and season with turmeric, pepper, lemon juice, and olive oil (to taste).
Once the cracker is cooled and cut, slice the avocado and place it evenly over two crackers.
Top the crackers with your shaved cucumber garnishes. Powerhouse lunch!
