HEALTHIEST GLUTEN-FREE CHOCOLATE CHIP BANANA BREAD RECIPE
This easy-to-make banana bread is filled with good-for-you ingredients that make this the perfectly delicious energy packed snack and treat. High in fiber, protein and immunity boosters. Also gluten-free, dairy-free and grain-free making this a powerhouse snack. Plus, it’s so easy to sneak in all of your favorite superfoods!
INGREDIENTS:
3 extremely ripe bananas (mashed very smooth into around 1- 1 ¼ cup worth)
3 organic eggs
3 tablespoons unsweetened organic almond milk
1 teaspoon vanilla extract
2 tablespoons manuka honey
2 ½ cups packed blanched fine almond flour
½ cup flaxseed meal
½ teaspoon bee pollen
2 teaspoons cinnamon
1 teaspoon baking soda
½ cup dairy-free chocolate chips, plus an additional 2 tablespoons extra chocolate chips for sprinkling on top
Optional: ¼ cup unsalted pumpkin seeds (Can use other types of chopped nuts)
PREP: 5-10 minutes tops
Preheat oven to 350 degrees.
Spray an 8 ½ x 4 ½ inch loaf pan nonstick cooking spray.
Using a mixer, mix all the wet ingredients: mashed bananas, eggs, almond milk, honey and vanilla. Next add in the dry ingredients: almond flour, flaxseed meal, cinnamon, bee pollen and baking soda. Last, add in the chocolate chips.
Pour the batter into the loaf pan. Sprinkle the top of the mix with the extra chocolate chips and the pumpkin seeds.
Bake for 50-60 minutes (every oven is different.) Cool bread for 10 minutes before slicing.
Keep this banana bread well-covered in foil or plastic wrap at room temperature for up to 3 days. It also freezes well either pre-sliced or individually sliced for the perfect snack!
