HEALTHY CUCUMBER, MANGO & AVOCADO SALAD RECIPE
This summer salad is made with fresh, light and organic ingredients that are not only healthy but absolutely delicious as a main or side. I love adding parsley and mint to my salads as an extra boost of nutrients and incredible for digestion - amazing Middle Eastern ingredients. High Low Lean No, yes please! HIGH: Veggies/Fruits...cucumbers and mango. LOW: Healthy Fats... avocado and TKM Ultimate Organic Dressing. LEAN: Protein Sides... grilled shrimp or salmon. NO: Added Salt or Sugar.
INGREDIENTS: Serves 4. Use organic when possible.
SALAD:
1 large organic cucumber, half peeled, and cubed (about 2 cups worth)
1 large ripe organic mango, peeled and cubed (makes 1.5-2 cups worth)
1 large organic avocado, cubed (if not serving right away - wait to add avocado)
3-4 tablespoons finely chopped organic parsley
1 tablespoon finely chopped organic mint
Sprinkle lime juice
Optional Ingredients based off your likes:
Pick other unsalted nuts: ½ cup chopped almonds, pistachios, walnuts
Top with grilled white fish or salmon
Top with grilled prawns
Serve beside TKM Salmon Beauty Burger (or black bean burgers)
Serve beside TKM Cauliflower Pizza
DRESSING:
Splash of filtered water
¼ cup organic apple cider vinegar
½ lemon squeezed
1 teaspoon of organic honey
¼ teaspoon cinnamon
¼ cup extra virgin olive oil
PREP:
DRESSING:
Whisk the splash of water, vinegar, lemon, cinnamon and honey in a large bowl or use a salad dressing shaker.
Slowly pour in the olive oil while whisking until the dressing comes together.
Refrigerate and chill in the fridge until your salad is ready to be served. You can store in the fridge for up to one week.
SALAD:
Add chopped ingredients to a large salad bowl. This is when you would also add any additional add-ins.
Drizzle some of the dressing on the salad.
